Go into your tree ('Family Tree' > 'Tree'), click an entry, select 'Options' on the left-hand display and remove, edit, or add whatever you choose. You can edit also on the profiles page ('Family Tree' > 'People' > choose individual). You can change your own email address by going on your account ('My Profile' > 'My Contact Information').
